Well at least until Spring!
I don’t know about you but I’m a “fair weather” salad eater. I am notoriously always cold and I think this causes me to have an aversion to cold foods during cold weather. Frozen treats, smoothies and salads are pushed off the menu in favour for anything warm! It’s not that I’ll never eat a salad between the months of November to April, but I just don’t crave them until the thermometer climbs.
I turn to soup to fill my body with warm, healthy goodness. Soup is the perfect way to eat your veggies when the produce isn’t at it’s peak freshness like in summer.
This week I made this great soup I found on Pinterest- Curried Red Lentil, Kale and Sweet Potato Soup. Not only is the soup really filling but it’s also vegetarian and packed with super foods. I’ve been trying to incorporate more vegetarian meals into my diet lately.
Ingredients:
1 tbsp olive oil
1 onion, finely diced
½ jalapeno, seeded, diced
2 tsp grated ginger
1 large garlic clove, minced
2 tsp curry powder
1 tsp salt
3 tbsp tomato paste
5 cups water
14 oz coconut milk
1 cup red lentils
1 medium sweet potato, peeled and diced into ½-inch cubes
2 bunches kale, stemmed and coarsely chopped
2 tbsp minced cilantro

This soup was super easy to make and I liked that the ingredients are things I usually keep on hand. So it’s easy and convenient.
