After almost 6 weeks of making school lunches, I am still searching for snacks that are clean and healthy and most importantly my kids will actually eat!!! There are pluses when that lunch comes home uneaten- “didn’t like that muffin on Monday- well I’m sure you will like it on Tuesday or Wednesday”….. you get the idea. The major draw back of that lunch bag coming home still full- my kids are full of crabbiness!
I have experimented with pretty much every “clean eating” muffin recipe on Pinterest and results have been pretty bleak. Most of the muffin recipes I have tried have major texture problems- tasting like the main ingredient is play-doh. Yuck! As good as these muffins are (and they are seriously yummy!!!), my kids are a little tired of the PMS muffins. One of our favourite muffins from my non-clean eating days was a Morning Glory Muffin. I would add grated carrot and apple, craisins and shredded coconut to a Quaker Oat oatmeal muffin mix. Muffin mix is not something I would use now. I found a great, clean recipe for Carrot and Apple Muffins. You will need:
1 1/2 cups Plain Flour/Gluten Free Flour/Whole Wheat Flour (I used whole wheat pastry flour)
1/4 cup Oatmeal
2 tbsp Flaxseed, ground
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Cinnamon
1/2 cup Honey (or sweetener of choice)
1 cup Carrot, grated
1 medium Apple, grated
2/3 cup Applesauce
1 Egg
***I also added 1/2 cup shredded unsweetened coconut and 1/2 cup craisins***

The muffins came out tasting like well A MUFFIN! Yummy!
My kids approve- well I’m assuming- the muffins went to school in the lunch bag and didn’t come home! It’s a win in my books!
