I Love Kale Forever

Before February 2014, I had never tasted kale. I never even considered eating kale. Now I’m kale’s biggest fan! I easily eat a kale salad 5 days a week. IMG_0330.GIF
Things I love about Kale Salad (in no particular order)
-it keeps for several days in the fridge (unlike a lettuce salad)
-it’s a super food; one of the healthiest vegetables on the planet
-it’s so versatile; I have had so many different versions of a kale salad
-and Ryan Gosling loves kale!

  1. Just made this kale salad with the warm cranberry dressing. It’s fantastic. I went shopping tonight for ingredients for 3 different kale salads and I’ve washed and wrapped it all and made the first of three. The detox one will be for lunch tomorrow. We were doing kitchen renos for about 6 weeks so planning and cooking well wasn’t high on my list but it’s done now and I’m ready to jump in and try these healthy, yummy dinner options. Thanks for sharing your recipes. I really appreciate it.

    • Wow! That’s awesome Nancy!!!! Good luck with your kitchen renos! Can’t wait to hear all about it. I actually first started eating clean during the worst part of our kitchen/entire house renovation. It is possible! Good luck! 🙂
