Before February 2014, I had never tasted kale. I never even considered eating kale. Now I’m kale’s biggest fan! I easily eat a kale salad 5 days a week.
Things I love about Kale Salad (in no particular order)
-it keeps for several days in the fridge (unlike a lettuce salad)
-it’s a super food; one of the healthiest vegetables on the planet
-it’s so versatile; I have had so many different versions of a kale salad
-and Ryan Gosling loves kale!
Well I do love kale. Picking a favourite kale salad is tough. But I do hold a special place in my heart for the first kale salad I tried and loved https://ichoosehappyblog.com/2014/07/16/can-a-kale-salad-make-you-happy/. There is a new kale salad catching my fancy right now- Kale Salad with Warm Cranberry Vinaigrette! Yes I said warm!
You will need:
3 Tbsp. olive oil, divided
1 shallot, peeled and thinly sliced
3 cloves garlic, coarsely chopped
1 cup dried cranberries
2 Tbsp. red wine vinegar
2 teaspoons honey
juice and zest of half a lemon
1/8 tsp. salt
1/8 tsp. black pepper
1 bunch kale, very thinly sliced
1/4 cup sliced almonds
(optional) 1/4 cup crumbled blue cheese or goat cheese (I used goat cheese)

1/2 tbsp balsamic vinegar
1/2 tbsp spicy brown mustard
1/2 tsp salt
1/2 tsp pepper
1/4 tsp parsley

Just made this kale salad with the warm cranberry dressing. It’s fantastic. I went shopping tonight for ingredients for 3 different kale salads and I’ve washed and wrapped it all and made the first of three. The detox one will be for lunch tomorrow. We were doing kitchen renos for about 6 weeks so planning and cooking well wasn’t high on my list but it’s done now and I’m ready to jump in and try these healthy, yummy dinner options.
