I Like Fighting with my Husband

I love spending time with my husband- honestly he is my best friend BUT I’ve always HATED working out/playing sports with him. It doesn’t matter that I workout more than him and that I’m probably (definitely) in better physical condition than him- but genetics have made it that he is faster, stronger and better at pretty much every sport and workout move than me. He can knock off chin ups with ease and run a sub-30 minute 5k without really training- leaving me in his dust. I tried to show him up with my pushups since I can put my nose to the floor but then he showed me up by executing a perfect push-up with my 9 yr old daughter sitting on his back. Ugh! 

So I’ve really struggled to find a way to workout together until I discovered BOXING! Never in my life would I have thought that I would love boxing. I liked the Rocky movies but I don’t think I’ve seen ALL of them. I’ve never watch the sport. I have no idea who is the Heavy Weight Champion right now. The only boxers I can name are Mike Tyson  and Mohammed Ali! But I have discovered that I like “floating like a butterfly and stinging like a bee”. Lol! 

Last year my trainer introduced me to boxing, using gloves and focus mitts. I was hooked. I started to learn the different moves (jab, cross, hook and upper). I got faster and stronger AND sweatier! Wow! What a sweat fest! Boxing is a great full body and mind workout. Obviously you are working your arms, but after a boxing class my back, core and legs are sore and tired. Remembering the combinations are a great workout for my mind as well. And honestly, as a woman, I feel strong, powerful and sexy boxing! 



My husband and I have been boxing at home. It’s a pretty economical at home workout. For about $100, you can buy a set of focus mitts and boxing gloves. And the best part, you don’t need a lot of space to get a good workout in. 



I gave this set to my husband and son for Valentines Day. Even my little 9 yr old daughter has gotten in on our workouts. Sparring has been so fun and a great workout- with all our varying fitness levels and strength. I can hold the focus mitts for my 12 year old son and end the workout tired and sweaty- it’s a good thing in my books! 

So I’m a boxer….weird! There are a few things that I vividly remember from the Rocky movie

  • “Adrian!” (Duh)
  • Rocky running up those steps in Philly
  • Apollo dying (sob)

But the one image that always comes to mind about boxers is that scene from Rocky I where Sylvester Stallone drinks the raw eggs! Ugh! Gross! Do boxers really do that??!! Yuck! 

After a great boxing session, I want protein but I do draw the line at raw eggs! Lol! This week, I made an amazing Asparagus, Goat Cheese and Bacon Omelette.  I made this with pretty much leftovers in the fridge. 

Ingredients

1 tsp butter (I use Stirling Creamery Butter- the best butter in the world!)

1 tbsp diced onions

1 tbsp diced bacon

Leftover asparagus (precooked, about 6-8 stalks)

2 eggs, beaten with about 1 tbsp of water

1/3 C goat cheese, crumbled

1 tsp dried oregano

Salt and pepper to taste

Melt the butter over medium/high heat. Fry the onions until translucent, then add the bacon. Add the asparagus to the pan. Using the spatula, spread the asparagus and bacon evenly over the pan. Pour in the eggs, swirling the pan to spread the eggs evenly. Let the eggs cook almost through, then add the goat cheese and sprinkle the oregano, salt and pepper. 



If you suck at flipping an omelette like I do, finish it under the broiler and voila you have a frittata! Hahaha! Or you can flip half of it over itself and then swear loudly because you’ll probably f#ck it up like I did but whatever because it will still taste awesome! 



I served mine with Art Is In Bakery Sour Dough bread toasted and topped with Stirling Creamery Butter- flavour explosion! 



Luckily no one tried to steal a bite of this- I probably would have had to put on my boxing gloves and opened a “can of whoop ass” on them! Lol!
