Procrastinating

Right this minute, I’m suppose to be emptying my bedroom of all its contents. I’m not. I’m sitting on the porch, with my dog Boyd, drinking a coffee and I just played an epic game of Candy Crush. I am a procrastinator. I have been emptying my room, since now it belongs to my daughter. She really doesn’t want any of my stuff- weird.
I started emptying it yesterday but I procrastinated big time. I have found some great stuff while cleaning my room and its distracting. I found a few articles of clothing I forgot I had, I found my wedding dress- which I just had to crack open that special dry cleaning box its been sitting in for the past 14 years and try it on. I got some stuff accomplished but everything took much longer than it should have so when the dinner hour arrived- I had no plan- no idea what to have for dinner. I went to the grocery store (I’m like Norm from Cheers- I go there everyday- I keep waiting for all the cashiers to yell out my name when I walk in). I live in a small town. Our grocery store is pretty good but there are only so many “clean” ingredients sold at the store. I wanted to eat healthy and I wanted something quick and easy. I really wanted to make a kale salad but they were out of kale- but I remembered I had lettuce in the fridge. I grabbed an Ace Bakery baguette (instead of making potatoes or rice), some Suntech cherry tomatoes and I found frozen wild caught salmon. I had my plan!
My friend Nicole (who encouraged me to write this blog- Yay Nicole!) had emailed me one of Sarah’s (innerathletes.net) recipes a few months ago. Salmon with a Chili Lime butter and Pumpkin Seeds. It was so amazing and its a super quick recipe. Here it is since its not on the Inner Athlete website.
Ingredients

2 Tbsp pumpkin seeds
1.5 tsp butter
1/4 tsp fresh lime zest
1 Tbsp lime juice
1/8 tsp chili powder
2 x 4 – 5 oz pieces of salmon
Salt and pepper
1 Tbsp olive oil
(I doubled it since I had more salmon)

Place pumpkin seeds, butter, lime zest, lime juice and chili powder in a bowl.

Heat oil in pan over medium heat. Sprinkle salmon with salt and pepper and add to the pan, cooking until browned – about 4 minutes on each side.

Remove pan from heat. Transfer salmon to a plate. Add the butter / lime mixture to the pan and stir until butter is melted and top salmon with sauce

IMG_0140.JPG See that fancy frying pan- got that for free from my local grocery store. I collected a lot of stickers to buy that baby!
While everything was cooking, I made a super quick salad. A simple salad of romaine lettuce, cherry tomatoes, mini cucumbers (also from Suntech) and avocado topped with Farm Boy balsamic vinaigrette. Here is the finished plate-

Gourmet meal is 15 minutes! Sometimes procrastinating pays off. If I had more time to cook, maybe I wouldn’t have had something so good!
