Workout. Work + Out. What a stupid name. It sure doesn’t sound appealing. When I go to my workout class, I work hard but that doesn’t keep me going back. I go back because its FUN! The instructor is hilarious. The music is awesome. The ladies in the class are so nice. Maybe you are thinking, my gym doesn’t sound like that. You can do something about that. Even though my gym is already pretty awesome, part of the workout I think is to work at having fun. You can’t go to a dinner party and expect to have a good time if you don’t contribute right? I think the gym is the same. Sing, laugh, chitchat, sweat, be part of the group. Groan together during lunges! That’s what will get you through that gym door!
Do you know what else can be fun? Healthy food. Really. No really.
This weekend, I did a Mexican fiesta with my family. Super fun food. It was fun to make and it was fun to eat. Mexican food healthy. Yes. This isn’t Taco Hell food.
The menu: homemade tortillas, guacamole, taco ground beef, and tequila lime chicken.
In the morning, my kids and I made the tortillas. I found the recipe on Pinterest. I had made tortillas before but the recipe I used contained shortening (not clean). I found this recipe and only had to change one ingredient- the vegetable oil (a shitty bad for you oil) to grapeseed oil. You will need
3 cups flour (I used unbleached white)
1 tsp salt
1 tsp baking powder
1/3 cup grapeseed oil
1 cup warm water

When they are cooking they will bubble like this.
The tortillas stayed nice in soft in a ziplock with a damp piece of paper towel.
Aren’t they beautiful? And more importantly they are free from all the chemicals found in a bag of tortillas from the grocery store.
Who wants to eat all that crap? Not me….anymore….
I also made taco meat. I used this recipe for homemade taco seasoning I had found on Pinterest. I actually made the seasoning a few weeks ago and kept the extras in the cupboard. I did add 1 tbsp of corn starch to the recipe. Here is a link to the recipe http://myfrugaladventures.com/2014/07/easy-homemade-taco-seasoning-recipe/. I also made Tequila Lime Chicken. Here’s what I did:
Tequila Lime Chicken
4 boneless, skinless chicken breasts
1/4 cup tequila
2 limes, juiced and zest
1 clove garlic, minced
½ Tablespoons Olive Oil
¼ teaspoons Cumin
½ teaspoons Chili powder
handful of fresh cilantro
Marinade the chicken for at least an hour. BBQ the chicken until cooked (internal temperature of 160 degrees). Shred the chicken and serve with the tortillas. The tequila will cook off during BBQing so you won’t get drunk!
Honestly there was something “missing” from my taco. Cheese and sour cream! I stopped eating dairy during my clean eating transition. Tacos just aren’t the same without both ingredients UNLESS you make this guacamole!
Guacamole
2 avocados
1 tomato, diced
1/2 red onion, diced
1 handful of cilantro, finely chopped
1 clove garlic, minced
1 jalapeño pepper, minced (no seeds)- optional
1 lime, juiced
Here’s a tip- I like my guac a little creamy- not chunky. I use my pastry cutter to mush it up a bit.
I served the tacos with shredded lettuce and diced tomatoes. My kids did have cheese- they still eat a limited amount of hard cheese.
