I love softball.
The crack of the bat. The sound of the ball hitting the leather glove. Sitting in the stands, laughing with the other parents- cheering on our sons. I love “swing batter batter swing batter”. I love the warm summer breeze. I love the general slowness of the game.
But…
I hate the mosquitos. I hate how uncomfortable the bleachers are. I hate that I can never remember which field is left or right.
But most if all, I hate rushing to get to the game. All of my son’s ballgames start at 6:30 so he needs to be there at 6:00 to warm up. That means we need to be eating dinner by 5:00-at the latest. How does one do that? How does a mom prepare a “clean” (meaning fresh, homemade, scratch) dinner that is healthy AND my kids will actually eat by 5:00??!!!!!!
Answer: CROCKPOT!!!!
I know what you’re thinking- crockpot is January food not June food- but it doesn’t have to be! My sister-in-law (who has to be a crockpot expert with 3 kids in hockey all winter and then switching to soccer all summer) told me about this recipe for Pulled Chicken Tacos. It is so easy! So simple! I can’t believe I waited this long to try it!
Crockpot Pulled Chicken Tacos
1 bottle of salsa (I use a good quality, organic salsa)
2 tbsp of homemade taco seasoning (recipe follows)
4-6 boneless, skinless chicken breasts
That’s it!!!!!
Mix the taco season with the bottle of salsa. Place chicken in the crockpot and pour the salsa mixture over the chicken. Cook the chicken on low for 4-6 hours. Using two forks, shred the chicken and serve as tacos or on nachos. So easy! So delicious!
Homemade Taco Seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbsp chili powder
1/4 tsp oregano
1 tsp paprika
3 tsp cumin
1 tsp salt
2 tbsp corn starch
Mix all ingredient and keep in a sealed container.
Play ball!
