Cottage Clean

August long weekend is cottage time for us. The minute I step foot in the cottage my “to do list” looks something like this:
-nap
-read 7yr old Cosmo and People magazines (a very amusing parenting article written by Billy Ray Cyrus on how he is raising Miley to be a good girl ha!)
-swim
-read smutty novels
-drink beer
-eat chips

I’m not sure if you noticed but “eat healthy” and “workout” don’t usually make the list. Usually the only cottage workout is climbing the stairs from the lake to the beer fridge.

I wanted this weekend to be different. I’m just coming off 3 weeks of selfish (or intensive self love) working out. I did A LOT of classes and I wanted to challenge myself to see if I could keep it up at the cottage.

Is it possible to eat clean on vacation?

I’m not sure what the entire weekend will hold, but Saturday is the day I’ve chosen to stay totally clean.

My new “to do” list:
– workout
-eat clean
-healthy snacks
-nap
-swim

I went for a run. FYI cottage roads are very hilly. After my run, I did the cardio and abs part from last week’s Inner Athletes workout. The plus side of attending so many classes is I can do the routine totally by myself- not as much fun as when The instructor leads it but it got the job done πŸ™‚
Then I had breakfast. A quick, easy and healthy breakfast of Jordan’s Muesli, a banana and coffee (I brought my Keurig- I’m not roughing it! I’m on vacation!)20140802-143441-52481821.jpg

After swimming and playing at the lake, we were starving. The cottage kitchen is pretty rustic and not really well stocked but I managed to make this yummy kale salad for lunch.

Cottage Kale Salad
Ingredients
2 boiled eggs
Handful of Suntech grape tomatoes, sliced
2 handfuls of rainbow kale, chopped
1 handful of baby spinach, chopped
1/4 cup crumbled goat feta
1 avocado, diced

Dressing (I didn’t really measure)
1 lemon, juiced
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp fresh ginger, grated
1 garlic, minced (so excited- the garlic I found was from Ontario!!!)
Salt and pepper

Tossed it together and ate it overlooking the lake! Yum!

At the cottage you MUST snack. It’s the law! My go to is usually chips. Sarah introduced me to this most AMAZING popcorn. It’s non GMO and totally clean and RIDICULOUSLY expensive! I lucked out and got some marked down at Farm Boy. It is so good and it is definitely splurge worthy!

You have to buy some just to read the bag of popcorn- it’s pretty cute!
Dinner was pretty rustic- “Caveman Chicken” (chicken cooked over the fire lol), garlic smashed potatoes, cucumber & tomato salad and the leftover kale salad.

I did it! A whole day of clean and healthy living at the cottage. My hubby did just show up to the cottage with a growler of my favourite Raspberry Wheat Ale from Big Rig Brewery so no telling how the clean eating will go from here on out. If my choices are less than stellar, I’m not going to beat myself up about it. Instead, I will savour every sip. Happiness is a choice, a choice easier made when you are sitting beside a lake!
